Poor Vida Salsa – Habanero Onion

Ingredients:
Fire Roasted Tomatoes, Yellow Sweet Onion, Jalapeno Peppers, Poblano Peppers, Habanero Peppers, Olive Oil, Lime Juice, White Vinegar, Garlic, Cilantro, Sea Salt, Sugar, Red Pepper Flakes, Seasoned Pepper (black pepper, red bell pepper, sugar, paprika), Vegetable Stock (concentrated carrot, celery, onion, tomato, potato & garlic, hydrolyzed soy protein, salt, yeast extract, sugar, maltodextrin, soybean oil, spice extractive), Cherrywood Smoked Sea Salt, Cayenne Pepper, Potassium Sorbate

This Habanero Onion Salsa is really what started it all for Poor Vida as a hot sauce maker. I have always made my own salsa at home, but never with any specific recipe. Whenever I was in the mood, or happened to see a tomato or pepper in the store that caught my interest, I would grab a cartful of ingredients, and take them home to make salsa. In 2016 or so, we had started a little garden at home, and that year I grew a habanero plant for the first time. That year was a crazy long growing season, and I wound up harvesting the 3rd batch from that plant sometime in October. Which meant I had a LOT of habaneros. We had grown tomatoes and jalapenos that year as well, so salsa was the first thing to come to mind for something that would actually make a dent in that huge pile of peppers. I had enough produce on hand to work through several iterations of ingredients before landing on what became Poor Vida Habanero Onion Salsa. I filled every mason jar in the house (and there were a lot, because my wife likes jars) and from then on it became a regular thing to make up a big batch of this salsa, give it away, and eat our way through jar after jar. The formula has changed a bit as we grew and went official, mainly in order to make the product fully vegan friendly.
